Khubani ka Meetha - Apricot Stew- Gluten free dessert



 Ingredients

  1. Apricots (Khubani) - 15
  2. Water - 4 cups
  3. Sugar - 3 tablespoons
  4. Cinnamon powder -1/4 tea spoon
  5. Whipping cream  coolwhip - 4 table spoons
  6. Pistachios -10 (soaked in water and slivered finely)

Method:

  1. Soak the apricots in 4 cups of water for 4 to 5 hours.  The apricots will  become plump.
  2. Turn on the heat with the pan of  water with  apricots.
  3. Add sugar and let it cook for 15-20 minutes till the apricots become very soft.  When you press them with a spoon they tend to melt. Try to mash all of them with a spoon. This will become jam like consistency.  Add cinnamon powder and mix well.  Apricot stew is ready.  Let it rest for 5 to 7 minutes.
  4. Serve it in an attractive glass for individual serving  with a dollop of coolwhip .
  5. Garnish it with pistachios and this  royal hyderabadi  indian delicacy  is ready to devour.
 Note:
  1. This recipe makes two servings.
  2. You may eat this dessert in any indian fast including navratri.
