Khubani ka Meetha - Apricot Stew- Gluten free dessert
Ingredients
- Apricots (Khubani) - 15
- Water - 4 cups
- Sugar - 3 tablespoons
- Cinnamon powder -1/4 tea spoon
- Whipping cream coolwhip - 4 table spoons
- Pistachios -10 (soaked in water and slivered finely)
Method:
- Soak the apricots in 4 cups of water for 4 to 5 hours. The apricots will become plump.
- Turn on the heat with the pan of water with apricots.
- Add sugar and let it cook for 15-20 minutes till the apricots become very soft. When you press them with a spoon they tend to melt. Try to mash all of them with a spoon. This will become jam like consistency. Add cinnamon powder and mix well. Apricot stew is ready. Let it rest for 5 to 7 minutes.
- Serve it in an attractive glass for individual serving with a dollop of coolwhip .
- Garnish it with pistachios and this royal hyderabadi indian delicacy is ready to devour.
- This recipe makes two servings.
- You may eat this dessert in any indian fast including navratri.
