Grits Upma- Indian Polenta- Gluten Free



Ingredients:
  1.  Quaker Quick 5 minute cooking  hominy grits- 1 cup
  2. Onion - 1/2 chopped
  3. Serrano Pepper- 1 chopped .
  4. Mustard seeds- 1 teaspoon
  5. Black split beans( Dhuli urad dal)- 1 teaspoon
  6. Split black Gram( Chana Dal) - 1 teaspoon
  7. Curry Leaves - 4-5
  8. Ginger -1/2 inch chopped finely.
  9. Peanuts -  2 tablespoons( dry roasted and crushed coursely)
  10. Butter- 1 teaspoon optional
  11. Lemon juice - 1 teaspoon.
  12. Water - 4 cups
  13.   Button Mushrooms - 2 small or 1 big chopped.
  14. Oil - 1 table spoon
  15. salt- 1 teaspoon


Method:

  1. Heat the oil in a pan . when the oil is moderately hot , add mustard seeds. Once they start spluttering, add urad dal, chana dal .
  2.  Once the dals become golden brown,add chopped onions, serrano pepper ,mushrooms , ginger and  curry leaves. Saute for 2-3 minutes till the onions become translucent.
  3. Add 4 cups of water and salt  and let it come to a boil.
  4. Now turn down the heat and add grits slowly with one hand and whisking the grits in water in another hand. Keep stirring the grits for 3-5minutes. Now cover the lid and let it cook for another 3-4 minutes.
  5. Now open the lid and stir once again an. Now add lime juice.
  6. Turn off the heat . cover the lid and let it rest for 6-7 minutes. The steam in the pan will help the grains to soak moisture and become soft.
  7.  You may now take it out in a bowl. Garnish it with butter and peanuts.
  8. Enjoy.

Note: Grits are coarsely ground corn, or sometimes alkali-treated corn  called(hominy grits).
