Grits Upma- Indian Polenta- Gluten Free
Ingredients:
- Quaker Quick 5 minute cooking hominy grits- 1 cup
- Onion - 1/2 chopped
- Serrano Pepper- 1 chopped .
- Mustard seeds- 1 teaspoon
- Black split beans( Dhuli urad dal)- 1 teaspoon
- Split black Gram( Chana Dal) - 1 teaspoon
- Curry Leaves - 4-5
- Ginger -1/2 inch chopped finely.
- Peanuts - 2 tablespoons( dry roasted and crushed coursely)
- Butter- 1 teaspoon optional
- Lemon juice - 1 teaspoon.
- Water - 4 cups
- Button Mushrooms - 2 small or 1 big chopped.
- Oil - 1 table spoon
- salt- 1 teaspoon
Method:
- Heat the oil in a pan . when the oil is moderately hot , add mustard seeds. Once they start spluttering, add urad dal, chana dal .
- Once the dals become golden brown,add chopped onions, serrano pepper ,mushrooms , ginger and curry leaves. Saute for 2-3 minutes till the onions become translucent.
- Add 4 cups of water and salt and let it come to a boil.
- Now turn down the heat and add grits slowly with one hand and whisking the grits in water in another hand. Keep stirring the grits for 3-5minutes. Now cover the lid and let it cook for another 3-4 minutes.
- Now open the lid and stir once again an. Now add lime juice.
- Turn off the heat . cover the lid and let it rest for 6-7 minutes. The steam in the pan will help the grains to soak moisture and become soft.
- You may now take it out in a bowl. Garnish it with butter and peanuts.
- Enjoy.
Note: Grits are coarsely ground corn, or sometimes alkali-treated corn called(hominy grits).
