Stuffed green peppers !- Gluten free

 Ingredients:

  1. Green Bell Peppers  : 2 
  2. Tomato                    : 1/2
  3. Butter                      :1/2 Tbsp
  4. Oil                          : 2   tsp
  5. Potatoes                  : 2 Medium large
  6. Button mushrooms    : 5 -6 sliced thinly
  7. Onion                      : 1 large ( cut in juliens)
  8. Serrano pepper        : 1  ( finely chopped)( optional) 
  9. Parmesan Cheese     : 2 tbsp
  10. Salt                          :1/2 tsp or according to taste
  11. Black pepper           : 1 tsp ( freshly coursely grounded)




Method:

  1. Wash , wipe and dry the bell peppers. Cut the top with a sharp knife as shown in picture. Scoop out the seeds and discard them.Oil the bell peppers and keep aside.
  2. Remove the seeds of  the tomato and cut it in julians
  3. Wash the potatoes. Do not wipe them .  Microwave them on high for 6 to 8 minutes.After they cool down, peel and mash them and keep them in a bowl or plate.
  4. Heat a pan  and add oil and butter together. Add   mushrooms and saute till the water evaporates and the mushrooms are a bit  golden in color. Take the mushrooms out of the oil and add them to the potatoes.
  5. In the remaining oil and butter saute the onions till translucent. Add  them to the potatoes mixture.
  6. Add serano pepper and parmesan cheese.
  7. Add salt and peper.
  8. Mix everything together. Equally distribute in two parts. Fill both the bell peppers with potato mixture.
  9. Put both the bell peppers in a baking tray . Cover the lids with their crowns and bake them at 350 degrees F for 15 to 20 minutes or till u see the charred marks.
  10. Transfer them on a plate. Garnish them with tomato.
