Mohanthal - Chickpea flour /Gram Flour Fudge-Gluten Free


 Ingredients:

  1. Condensed Milk                                        : 1 can 
  2. Chickpea flour/ Besan/Gram Flour             : 3 cups
  3. Clarified butter/ghee/melted  unsalted butter:1 cup
  4. Milk                                                          : 2 Tbsp
  5. Clarified butter/Ghee/melted unsalted butter:1 Tbsp
  6. Chopped almonds                                      :2 Tbsp
  7. Green cardamom powder                             :1/4 tsp(crush 3 pods)

Method:
  1. Crush the cardamom pods . Remove and discard the skin. We just need the inner part. Crush it to make a course powder using mortar and pestle or using rolling pin. keep aside.
  2. Mix the  3 cups of chickpea flour   with 1 Tbsp butter. Rub  it with your finger tips. Now add 2 Tbsp of  milk and rub  it again so that it gets the bread crumbs consistency. 
  3. Keep it aside for 20 minutes.Milk and ghee  will get absorbed in chickpea flour.
  4. Take a seive and run the mixture through it to get a smooth grainy texture.
  5. Put 1 cup of clarifed butter in a heavy bottom pan and turn on the heat. 
  6. When the butter is a bit warm, add the mixture and keep frying  continuosly on medium low heat.  We want the mixture to brown evenly and gradually. 
  7. When it changes color to deep golden brown, lower the heat and add condensed milk, green cardamom powder and half of chopped almonds. Mix it well.When it reaches the dough like consistency, turn off the heat.
  8. Grease a tray with melted butter or ghee. Transfer the mixture on this tray and flatten it to 1 inch thickness by a spatula.
  9. Now spread the rest of almonds on the mixture.
  10. Let it rest for 2 hours. Cut them in squares. 
  11. Mohanthal or Chickpea flour fudge is ready to taste. It remains good for 20-25 without refrigeration.
  12. This is a perfect recipe to eat and distribute to your friends and family for any festival.
Note: Open the keep the condensed milk can handy. Once the mixture turns golden brown , you need to add condensed milk immedietely otherwise the mixture will get burnt.

This is a gluten free make ahead dessert for any occasion.
