Semolina coconut egg less cake - Super easy dessert





Ingredients:

  For Cake

  1. Semolina( fine) - 2 cups( Also called Farina, Sooji)
  2. Coconut powder- 1 cup
  3. Condensed Milk - 1 can (14 oz)
  4. Baking powder - 1 tsp
  5. Green cardamom powder - 1/4 tea spoon
  6. Water - 1/2 cup
  7. Melted butter( unsalted) - 1/2 cup( 1 butter stick
 For Syrup

  1.  Water - 1 cup
  2.  Sugar  -1 cup
  3.   Fresh lemon juice - 1 tsp
  4.  Rose water - 3- 4 drops( optional)
  5. Coconut powder - 1/4 cup ( for garnishing)

Method:
  1. Grease a  8 * 11 baking tray and keep it aside.
  2. Preheat the oven to 350 degrees F.
  3. In a big bowl mix  semolina, coconut powder, cardamom powder and baking powder. Mix well.
  4. Now add condensed milk and melted butter to the mixture. Mix water and mix well till it reaches a smooth batter consistency.
  5. Pour the batter on the baking tray and let it bake for 20 minutes on 350 degrees.
  6. After 20 minutes, take out the tray and cut it in square or diamond shape. Put it back in the oven to cook for 20 more minutes or till it becomes golden brown. The cake will give a nice aroma when it is done.Take out the cake and let it cool for a little while
  7. Now  add water and sugar and boil it till the sugar melts. Add lemon juice and let it boil for 3 to 4 more minutes.  Turn off the heat and let the syrup cool a bit. Add rose water now.
  8. While the cake is still warm, pour the syrup evenly on the cake .Garnish it with coconut powder. Cover the tray and let it rest for 3 to 4 hours or  overnight.
  9. This is a super moist  egg less cake which can be enjoyed anytime.
