Black Bean Dirty Rice! Gluten Free
Ingredients:
- Leftover cooked Rice : 2 cups
- Onion :1/2 medium size finely chopped
- Cumin seeds :1/2 tsp
- Black Beans : Low sodium ( 1 can)
- Tomato : 1 finely chopped
- Cilantro Chopped :1 Tbsp
- Oil : 1 Tbsp
- Red Chilli Powder : 1/2 tea spoon ( I use MDH degi mirch)
- Garam Masala : 1 tsp
- Serrano Pepper : 1 finely chopped( optional)
Method:
- Turn on the heat and put a non stick pan on the stove.
- Add oil. When the oil is a bit hot, add cumin seeds.
- When the cumin seeds start spluttering, add chopped onions.Saute it till they become translucent.
- If you are not afraid of extra heat, you may add the serrano pepper now. You may leave it altogether if u like your food mild hot.
- Add tomatoes , salt and red chilli powder. Stir for 2 minutes.
- Wash the back beans in a strainer under running water and add the beans to the above onion masala.Mix it . If there is a bit water that will evaporate now.
- Now add garam masala and garnish it with chopped cilantro.
