Malai Kulfi - Indian Dessert- Gluten Free










Ingredients:


  1. Condensed Milk              : 1 can    ( 14 oz)
  2. Evaporated Milk              : 1 can    ( 14 oz)
  3. Heavy Whipping Cream   : 1 carton(16 oz)
  4. Cool Whip  Topping         : 1 Tub   (16 oz)
  5. Green Cardamom             : 3- 4 pods 
  6.  Almonds                          : 1/2 cup sliced and crushed
  7.  Food color                      : Green  2-3 drops( optional)
  8. Saffron                             

Method:

  1.  Crush the pods of green cardamom. Discard the skin and crush the seeds coarsly. Also coarsly grind the almonds. 
  2. Mix condensed milk , evaporated milk and heavy whipping cream in a big bowl and a wooden spoon stirring lightly.
  3. Fold in Cool Whip  lightly . Do not overmix.
  4. Add food color,  ground green cardmamom and almonds.
  5. Freeze them in Popsicle moulds overnight.
  6. This recipe makes 36 -40 kulfis.
  7. This is a very easy make ahead dessert . 
  • Note : Almonds tend to settle down . Take a table spoon and scoop some almonds from the bottom of mixtureand pour them  to the moulds. Otherwise , you will not get almonds in the kulfi . 
  • You may use saffron or yellow food color with almonds.
  • You may use green color with pistachios.
  •  You may also choose mixed nuts like almonds , pistachios and cashews and skip food color.  altogether.
