Mathri with a twist - an indian flaky pastry savory snack


  Ingredients:

All purpose flour     :  2 cups
Salt                        : 1 tsp
Carom Seeds         : 1 tsp
Black peppercorns : 1/2 tsp
Dried fenugreek leaves( Also called Kasoori Methi - Easily  available in indian grocery store). You may substitute this with dried oregano : 1 tsp
Black peppercorns : Coursely ground 1/2 tsp
Canola Oil - 1/2 a cup to be used in the dough. ( May be substituted with  2 Tsp of margarine)
Canola Oil - to fry the mathri
Water - 1/2 cup

Method:

  1. Add add purpose flour, salt, , carom seeds, fenugreek leaves/oregano,black peppercorns and mix them well.
  2. Add 1/2 cup of oil  and mix it well  so that it has a bread crumbs  like texture. 
  3. Now add water gradually to make a stiff dough.
  4. Let the dough rest for 30 minutes.
  5. Put the oil for frying in a heavy based wok and turn on the heat.Test by putting a small piece of dough. If the dough gets brown immediately, the oil is too hot, if the dough takes time to float it is too cold.the best way is to have the oil become very hot and then turn it down. the temperature should be medium low for frying the mathri. If the oil is too hot, the mathri will become too soft and it will not have the flaky texture.
  6.  Now take the rested dough and knead it once again and divide them in  10 equal parts. Take out one part and roll it as a 1/4 inch thickness round. Cover the rest of the dough with moist kitchen napkin.
  7. Apply 1/2 tsp of oil on the rolled mathri. Roll it as a pipe . Now cut equal parts of the dough.
  8. Take each part and press it from cut side up. It is look like a small disc. 
  9. Take a fork and prick all the mathris. 
  10. Now put 8-10  mathris in the wok at one time and  fry it till it becomes golden in color.
  11. Once they are golden from all sides,take them out from the oil with slotted spoon on a paper.Let them rest.
  12. Mathris are ready for u to have with tea or coffee. 
  13. You can make a bag batch of mathris . They need not be refrigerated. You can use them for atleast a month if stored in clean airtight container.
  14. Enjoy the mathris .

Note: 
  1. If you have an electric mixture put all the dry ingredients along with oil and gradually pour water for making the dough. The dough comes together very easily. It is a very easy recipe but needs constant supervision.
  2. Make sure you are wearing cotton clothes while frying the pooris and children are not around.
  3. All mathris should be fried at medium low heat.
