Punjabi Tarka - Basic Indian Curry Sauce - Glutenfree
Ingredients:
- Butter : 1 Tbsp
- Canola Oil : 1 Tbsp
- Onion : 1 medium chopped
- Ginger : 1/2 inch (scraped and finely grated )
- Garlic : 4 Pods(peeld and finely grated)
- Tomatoes : 2 Mediun( chopped)
- Cumin seeds : 1 tsp
- Red chilli powder: 1 tsp
- Garam masala : 1 tsp
- Serrano pepper : 1 chopped( optional)
- Dried Whole Red chillies : 2
- Water : 1/2 cup
Method:
- Turn on the heat . Add butter and canola oil.
- Add cumin seeds . As they start to splutter, add onions, ginger , garlic and dried red whole chillies.
- Saute it till the onions turn lightly golden.
- Add tomatoes.
- Add water and turn down the heat to allow the tomatoes to soften.
- Now add garam masala and red chilli powder. Mix well.
- Saute till the tomatoes blend well with onions and oil seperates.
- The tarka( indian curry sauce) is ready . You may red chopped green peppers now.
- This is the basic sauce in Indian recipes. You may add this sauce to many recipes.
- You may add salt according to the recipe in which you are going to use this sauce.
Note: Red whole chillies are not to be eaten. They add a distinct flavor to the dish. They should be discarded before serving .
