Punjabi Tarka - Basic Indian Curry Sauce - Glutenfree











 Ingredients:


  1.  Butter                : 1 Tbsp
  2. Canola Oil          : 1 Tbsp
  3. Onion                 : 1 medium chopped
  4. Ginger                : 1/2 inch (scraped and  finely grated )
  5. Garlic                 : 4 Pods(peeld and finely grated)
  6. Tomatoes           : 2 Mediun( chopped)
  7. Cumin seeds       : 1 tsp
  8. Red chilli powder: 1 tsp
  9. Garam masala     : 1 tsp
  10. Serrano pepper   : 1 chopped( optional)
  11. Dried Whole  Red chillies : 2
  12. Water                   : 1/2 cup


Method:


  1. Turn on the heat . Add butter and canola oil.
  2.  Add  cumin seeds . As they start to splutter, add onions, ginger , garlic and dried red  whole chillies.
  3. Saute it till the onions turn lightly golden.
  4. Add tomatoes.
  5. Add water and turn down the heat to allow the tomatoes to soften.
  6. Now add garam masala and red chilli powder. Mix well.
  7. Saute till the tomatoes blend well with onions and oil seperates. 
  8. The  tarka( indian curry sauce) is ready . You may red chopped green peppers now.
  9. This is the basic sauce in Indian recipes. You may add this sauce to many recipes.
  10. You may add salt according to the recipe  in which you are going to use this sauce.
Note:  Red whole chillies are not to be eaten. They add a distinct flavor to the dish. They should be discarded before serving .
