Masala Curry gravy in pressure cooker ! Gluten Free

 
     Ingredients:


1.  Onions                    -  4 lbs
2.  Tomatoes                -  4 lbs
3.  Ginger                     -  1/2 cup( peeled and grated)
4.  Garlic                      -  1/4 cup(peeled and grated)
5.  Oil                           -  1 cup
6.  Tumeric                   -  1/2 Tbsp
7. Red chilli powder     -  2 Tbsp (Degi mirch)
8. Coriander powder      - 1/2 Tbsp
9. Salt                             - 2 tsp

Method:
1. Peel and  roughly chop the onions in big cubes. I have used white onions in this recipe.
2. Chop the tomatoes and keep them aside.
3. Peel and grate the ginger finely.
4. Turn on the stove and heat the pressure cooker pan.
5. Add oil.
4. When the oil is hot, add chopped onions and mix well. Add salt to soften the onions and make room for tomatoes. Saute it for 2 minutes.
5.  Add  chopped tomatoes,Grated ginger,garlic,  tumeric, red chilli powder, coriander powder and mix well.
6.  Close the lid properly and put the whistle on.
7. When the first whistle blows, turn down the heat and let it cook for 20 minutes.
8. Turn off the stove and let the cooker cool to let the pressure off fully.
9. Open the pressure cooker .  The oil will be floating on the surface. You may take out the 3/4th of the oil from the surface and use it for any other recipes. This oil has a lot of flavor.
10.Use a hand blender and blend the curry to make a fine paste.
11. Cool it completely and store it in airtight container in the refrigerator.
12 You may keep this masala in the refrigerator for 10 days. If you wish to keep it longer you may put it in ziplocs according to your family size and freeze.

Note:
1. We have not used any water in the recipe. the water in onions and tomatoes will give enough moisture to pressure cook it.
2. Use a clean dry spoon to take out  gravy for use.
3. I have used Degi Mirch. This red chilli powder is mild hot and has more color . If you are using      very hot red chilli powder, just use 2 tsp in the recipe.You may increase or decrease the red chilli powder depending on how hot they are.
4 This is a very handy make ahead recipe .
5. We will make a lot of recipes using this basic gravy and add variations to it in my forthcoming blog entries.
6.  Add salt to all the recipes you make using it. The salt was used to mildly soften the onions only. It will not be sufficient for the recipes you make .
