Chote Aloo Pyaz Tamater Sabzi- A dry vegetable of potatoes tomatoes and button onions- Glutenfree

Get 15 button onions, 15 cherry tomatoes, 10 small new potatoes, 1 serano pepper ,  cilantro,  1 tsp salt, 1 tsp degi mirch or any red chilli powder , 1/2 tsp carom seeds and 1 tbsp of canola oil.


Chop each potato in half. Turn on the heat. Add 1 Tbsp of oil in a pan and heat it. When the oil is hot, add 1/2 tsp of carom seeds. Add washed and cut potatoes with peel. Let it roast for few minutes till the potatoes get light golden color.


Add onions to the potatoes and cover the lid for 4 to 5 minutes to  soften the potatoes and onions.


Remove the lid and add tomatoes , chopped cilantro and finely cut serano pepper. You may leave out serano pepper altogether if u do not like the heat.

Add salt and red chilli powder. I have added degi mirch .Let it cook for 2 to 3 minutes after the tomatoes are added. Please do not try to saute it with spoon or spatula. The vegetables are very soft. We do not want them to become mushy.


Turn off the heat and serve it in a serving bowl.


Serve it with Roti, nan or  parantha . You may use this as a side dish to any day of the meal. Enjoy!
