Baigan Bharta- Mashed charred eggplant with onions and tomatoes - Gluten free

 Take one eggplant and rub oil on its surface. Now put it on the hot grill  and keep rotating so that the skin of the eggplant is charred from all sides.

Take one cup of chopped onions. one cup of chopped tomatoes, 1 serano pepper finely chopped and cilantro.You will also need two tablespoons of canola oil,1tsp of red chilli powder,1 tsp of  garam masala and salt to taste. You may also add peeled and grated 1 inch ginger. It is optional. You may also add 1/2 a cup of frozen green peas(optional).
 
Peel the skin and wash the eggplant. Remove excess water by dabbing it with kitchen towel.Chop it in finely using a knife or rough chop it in the blender. Do not make a fine paste. Remove the crown and keep it aside.



Heat oil in a pan and add chopped onions.  Saute it till they become translucent. If you are using frozen peas and ginger, add them now. Saute it for one to two minutes and add tomatoes, serrano peppers, salt and red chilli powder and mix well. Saute it till it gets a glossy shine and oil oozes out.  Take out the bharta in a serving dish and garnish it with cilantro and garam masala powder. The baigan bharta is ready to devour!
