Bachelor's Chicken! - Gluten free
Ingredients:
- 1 chicken(full) : Cut in 12 pieces with bones.
- Onions : 2 (chopped juliennes)
- Ginger : 1 inch ( chopped in juliennes)
- Garlic : 6 pods ( chopped in juliennes)
- Tomatoes : 4 medium size ( chopped finely)
- Serrano pepper : 1 ( finely chopped optional)
- Jalapeno peppers : 2
- Green cardamoms : 4 ( pods slightly crushed)
- Cloves : 3
- Cinnamon sticks :1 (1/2 inch)
- Garam masala : 1 tsp
- Tumeric( haldi) : 1/2 tsp
- Red chilli powder : 1 tsp (I prefer degi mirch . You may use spanish paprika)
- Salt : 1 tsp or according to taste.
- Oil or clarified butter : 2 Tbsp
- Water :1/2 cup
- Cilantro leaves : 1 Tbsp
Method:
1. Turn on a heat and put a heavy based pot on the stove.
2. Add chicken to the pot. Now add onions, ginger, garlic, serrano pepper, green cardamoms, cloves, cinnamon stick, tumeric, red chilli powder and water to the pot. Mix it well and put the lid on the pot on medium high heat. After 8 to 10 minutes all the onions garlic and ginger will be soft. Mix it well . Slowly onions, ginger garlic along with water will turn into a thick gravy and you cannot see onions in the chichen any more.
3. Add tomatoes, salt and let is cook on high till the tomotoes are softened and become a part of the gravy.
4. Add oil or clarified butter and saute it on high flame till the chicken gravy glistens or gets a shiny texture. .
5. Add garam masala, chopped cilantro and whole jalapenos and mix them well.
6. Enjoy chicken with naan, parantha or rice.
7. This is one of the simplest recipes of chicken which tastes heavenly.
Note: You may add 1 tsp dried fenugreek leaves for added Indian flavor.
