Vegetable Spring Rolls with sauce



Ingredients:

  1. Spring roll wrappers - square(1 packet)
  2. Cabbage - 2 cups ( finely chopped lengthwise)
  3. Soy based meat substitute crumbles- 1 packet(12 oz)
  4. Serrano pepper - 1 ( finely chooped)
  5. Ginger - 1/2 inch( peeled and finely chopped)
  6. Onion -1/2 medium(chopped finely)
  7. Soya sauce - 11/2 tablespoons
  8. Salt - 1/2 teaspoon
  9. Black pepper - 1 teaspoon
  10. Oil - 1 tablespoon
  11. Green onions- Cut slanted (1/2 cup only greens)
  12. Water - 2 table spoons
  13. Corn flour - 2 teaspoon
  14. Oil to fry the spring rolls
 Sauce
  1. Chinese red chilli sauce - 2 tablespoons.
  2. Sour cream - 1 tablespoon

Method:
  1. Heat a shallow pan and heat the oil. Add onion and ginger and saute it for two to 3 minutes.
  2. Add meat substitute crumbles.Saute it till the texture of the soy substitute changes and it becomes grainy.
  3. To this add cabbage, serrano pepper, soya sauce, salt and black pepper. Mix it well. take the mixture out in a  big plate or tray and allow it to cool.
  4. Now add the chopped green onions to this mixture.
  5. Take a small bowl and mix water and corn flour and keep it aside. We will be using them to seal the spring rolls.
  6. Now take out one  square wrapper and put it in a robhus position.Put a spoon full of mixture in the lower end and start folding fom the lower side working upwards. when you reach the middle, fold the side edges it and fold it again. The last edge and tip should be sealed with cornstarch paste. Fold and prepare all the rolls and keep them under damp kichen towel to avoid drying.
  7. Heat the oil in the pan . When the oil gets hot, reduce the heat to medium high. Put 2 to 3 rolls at a time to fry them till they get the golden color.
  8. Whisk chinese red chilli sauce with sour cream for the sauce.
  9.  Enjoy this party hit appetizer.
Note:
  1. If you want non vegetarian spring rolls, you may add chorizo /ground pork instead of meat substitute .
