Vegetable Pasta
Ingredients:
- Rotini pasta - 1 cup
- Onion - 1 medium size (chopped)
- Mushrooms - 1/2 cup (chopped )
- Red bell pepper -1/2 ( cut in half inch pieces)
- Garlic - 1 pod ( peeled and crushed)
- Olive oil - 1 tablespoons
- Olive oil - 1 teaspoon for boiling water
- Salt - 1 teaspoon
- Salt - 2 teaspoons in boiling water for pasta
- Cumin seeds - 1 teaspoon
- Chat masala - 1 teaspoon
- Red chilli powder - 1 teaspoon
- Water - 5 cups
- Cilantro- 2 tablespoons
Method:
- Turn on the heat. Put the water in a big container . Add pasta , salt and oil . Cook till the pasta is soft but not mushy. Put the pasta in a colander and discard the liquid.Keep it aside.
- In the mean time , put another pan on heat and add oil. When the oil gets hot , add cumin seeds. As soon as the cumin seeds start crackling , add garlic . Now add onion, mushrooms and red bellpeppers. Saute it for 3 to 4 minutes till the vegetables are a bit tender . Add pasta ,salt , red chilli powder ,chaat masala and stir well. Let it cook for 1 to 2 minutes. Garnish it with Cilantro.
Note:
- You may choose vegetables of your choice according to your taste.
