Baigan Aloo Sookhe Eggplant and potatoes vegetable



 Ingredients: 

1. Chinese eggplant 🍆- 3 long

2. Potatoes - 4 medium 

3. Onion - 1 large chopped . 

4. Tomatoes - 2 large chopped 

5. Ginger - 1inch (julienned )

6. Green chilies - 3 

7. Cilantro - 1/2 cup 

8. Salt - 1 tsp

9. Turmeric - 1/2 tsp

10. Degi Mirch - 1 tsp

11. Dry coriander powder - 1 Tsp

12 . Chilli flakes - 1 tsp

13. Mustard Oil - 2 tsp

Method :

1 . Wash the vegetables . Chop the eggplant , onion , cilantro , ginger  and tomatoes . 

2. Heat a pan with oil. When the oil is smoky , add chopped onions , potatoes , ginger juliennes and green chilies . Sauté it till the onions turn slightly golden and potatoes get a  light coating of oil . 

3. Add eggplant , salt , turmeric , red chilies and dry coriander powder . Mix well . 

4. Add tomatoes and half of Cilantro . Mix it . Turn the stove on low heat . Cover the lid and let it cook for 5 minutes . Keep checking do that the Masala does not stick to the bottom . The tomatoes will release the juice and it will give a nice glaze to the sabzi . Check one piece of potato for tenderness. If the potato is done , the vegetable is ready . 

Enjoy this sabzi with Roti , Parantha , Naan or plain boiled Rice .
