Cranberry chutney - Gluten free sauce
My husband loved this chutney. He insisted that we should have it in our refrigerator throughout the cranberry season. I could not agree more.
Ingredients:
- Cranberries : 3 cups
- Apple : 1 big or 2 small ( cut in small pieces)
- Sugar : 1 cup
- Raisins : 1/2 cup( golden)
- Black salt : 1 tsp( easily available at Indian grocery stores)
- Walnuts : 1/2 cup chopped.
- Orange juice : Freshly squeezed (1 cup)
- Orange zest : 1/2 tsp
- Apple cider vinegar: 1 tsp
Method:
- Take a pan and add rinsed cranberries, chopped apples, sugar, raisins, orange juice, orange zest ,apple cider vinegar and black salt.
- Turn on the heat and put the pan on the stove on medium heat.
- Slowly the sugar will melt and the cranberries will start to burst and pop. Turn down the heat.
- In 5 -6 minutes the apples and cranberries be become very soft.
- Take a wooden spoon and mix everything well.
- The cranberries and apples will blend into a thick sauce.
- Add the chopped walnuts and mix them well.
- Cranberry Sauce chutney is ready.
Note : This is a make ahead recipe. You may make this chutney in bulk and make jars to give as thanksgiving gifts.
