Mix Vegetables - Gluten free




Ingredients:
  1. Cauliflower florets..............1 lb( frozen)
  2. Potatoes...............................2 big( chopped in 4 quarters)
  3. Beans...................................1/2 lb( frozen and cut)
  4. Peas......................................1 cup( shelled and frozen)
  5. Red bell pepper.....................1/2 cup( chopped in 1 inch pieces)
  6. Oil.........................................1 tsp
  7. Pressure cooker masala.........2 cups( check blog for recipe)
  8.  Plain Yogurt.........................1 cup
  9. Cumin seeds..........................1 tsp
  10. Mint leaves............................2 Tbsp (chopped finely)
  11. Green cardamons...................4
  12. Bayleaf .................................1
  13.  Cloves..................................4
  14.  Salt......................................1  tsp

Method:

  1. Put cauliflower florets , potatoes, beans, peas and red bell pepper in a microwave safe bowl and microwave for 5 minutes.
  2. Take a wok. Add a tsp of oil and let it heat. Add cumin seeds , bayleaf , cloves, green cardamom  and saute it for 5 seconds.
  3. Add the pressure cooker masala and saute it for minute.
  4. Now add all the vegetables and mix well lightly so that the vegetables do not break.
  5. Add mint leaves to the  yogurt and add to the vegetables.
  6. Mix it and let it cook for 2 to 3 minutes.
  7. Dish out in a nice bowl and get ready to enjoy it with roti, nan, poori , parantha or plain rice.

Note:
1.  If you are using fresh vegetables , put them in a micro safe bowl  with 1 cup of water and microwave for 5 minutes so that they become tender.

2. You can make large quantities of mix vegetables for a party in a jiffy.
