Mix Vegetables - Gluten free
Ingredients:
- Cauliflower florets..............1 lb( frozen)
- Potatoes...............................2 big( chopped in 4 quarters)
- Beans...................................1/2 lb( frozen and cut)
- Peas......................................1 cup( shelled and frozen)
- Red bell pepper.....................1/2 cup( chopped in 1 inch pieces)
- Oil.........................................1 tsp
- Pressure cooker masala.........2 cups( check blog for recipe)
- Plain Yogurt.........................1 cup
- Cumin seeds..........................1 tsp
- Mint leaves............................2 Tbsp (chopped finely)
- Green cardamons...................4
- Bayleaf .................................1
- Cloves..................................4
- Salt......................................1 tsp
Method:
- Put cauliflower florets , potatoes, beans, peas and red bell pepper in a microwave safe bowl and microwave for 5 minutes.
- Take a wok. Add a tsp of oil and let it heat. Add cumin seeds , bayleaf , cloves, green cardamom and saute it for 5 seconds.
- Add the pressure cooker masala and saute it for minute.
- Now add all the vegetables and mix well lightly so that the vegetables do not break.
- Add mint leaves to the yogurt and add to the vegetables.
- Mix it and let it cook for 2 to 3 minutes.
- Dish out in a nice bowl and get ready to enjoy it with roti, nan, poori , parantha or plain rice.
Note:
1. If you are using fresh vegetables , put them in a micro safe bowl with 1 cup of water and microwave for 5 minutes so that they become tender.
2. You can make large quantities of mix vegetables for a party in a jiffy.
